Spam fritters are essentially slices of spam deep fried in a batter.
I used to like it, but I haven't had any SPAM since the late 1950s or
early 1960s.
Word has it these came about in WW2 when there was a shortage of
fish in Britain, so we decided to replace it with Spam.
My mother says it was more the shortage of meat (which was rationed)
than the shortage of fish (which was not rationed), but the point of
contact between the UK population and SPAM was via its supply to the US
forces stationed in Britain, so it was given the backronym "Supply
Processed American Meat". Hormel (the maker) won't certify any
derivation, but "SPiced hAM" is the leading candidate.
Obviously still eaten, even perhaps flourishing.
