    We have a smallish chicken that I spatchcocked and marinated in lemon
    juice, olive oil, salt, pepper, garlic and oregano. I had hoped to do it
    on the gas grill but it started raining again so it is cooking in the
    oven. We are also roasting potatoes and carrots and steaming some beans.

    Follow up.... I basically faked his dish but I have to say it was
    incredible. I think it is probably the best chicken we ever cooked. I
    have used the same basic marinade many times and I have always had good
    luck with spatchcooked chicken, but this one was outstanding.

    My neighbor brought me some homemade dill dip, but it was super /salty. /
    I toned it down with more sour cream and mayonnaise, but it's still a
    bit strong. Also, some homemade slaw, but it will have to wait until
    tomorrow for it to thoroughly chill and be ready to be eaten. She also
    brought me lots of carrot and celery sticks. I'll eat something a bit
    later as I don't think the dill dip will really stick to my ribs as they
    say.

    All the women in this house went out so I was just going to fry up a steak in the fridge and eat it with nothing else but I found some plates of food and stuck it in the air fryer. A piece of rare beef would have been better but what I had was faster, easier, and less messy. Now, I'm gonna have some Mountain Dew.
    A Chocopie would be great with the Dew but I don't think I could hold it all down.
