This morning I decided to make a batch of hashbrown egg bites. This
short video was my inspiration, but I used cooked diced ham and added
snippets of chives and shredded cheddar cheese to each portion before
baking. He says 15 minutes at 350° however, mine took a smidge over
17 minutes for set eggs.

I did not get any crispy potatoes, still just as tasty though. Maybe
throwing the filled muffin wells into the oven to brown would have
resulted in that. As was, the hashbrowns just became part of the
eggs and not the bottom of cups. I'm not complaining with the finished muffins.
My batch came to 24 portions and used 13 eggs and oh how easy to pop
those breakfast goodies out! No sticking and definitely no scrubbing.
These were purchased at Amazon.com last year, but Walmart also stocks
these. I do like that they have a wire frame around the top edge and
the handles. Some of the silicone bakeware pans just fold up when you
try to lift them to place into the oven. So the soft bottom of the
muffin pan wouldn't produce wonky bites; I put each one on a turned
upside down cooling rack before going into the oven. It also made for
easy removing from the oven as well.

(These are used for banana bread, same great results, same ease in cleanup.)
