26100.7171 indicates that the latest (November) Security Update has
been installed. In the 'Quality Updates' section of your 'Update
history':

[As I reported earlier, KB5068861 fails to install on my system, hence 'winver' still reports 26100.6899 (October update).]
Check the WinRE partition free space
Powershell admin
Get-Volume
Then check the version of WinRE
DISM /Get-ImageInfo /ImageFile:\\?\GLOBALROOT\device\harddisk#\partition#\Recovery\WindowsRE\winre.wim
/index:1
Replace the # sign with your devices harddisk # and partition #
For Win11 WinRE was updated
=> in Oct. to Build #6891
=> in Nov. to Build #7149 (after installing KB5068891)
KB5068891 can fail installation for insufficient space in the WinRE
partition.
Also note, version 26100.6899 indicates KB5070773(the October Out-of-Band update was not installed => 26100.6901)
KB5070773 for most devices downloads and installs automatically(Windows Update) unless other local configuration settings prevent(it). It can
also be installed via its msu file downloaded from the Catalog
