For many, Easter is not over yet and today is a day of celebration.
Dyngus day is celebrated with polka music, kielbasa, and pirogi. Unfortunately, I've not found a good Polish store around here yet.

    From Google
Classic Dyngus Day Food & Drink
Kielbasa: Polish smoked sausage, often served boiled, grilled, or in sandwiches.
Pierogi: Dumplings filled with potato, cheese, sauerkraut, or meat,
    often pan-fried.
Gołąbki: Cabbage leaves stuffed with pork, beef, and rice, covered in
    tomato sauce.
Kapusta: A savory stew of cabbage and sauerkraut, often cooked with
    bacon or pork.
Bigos: A traditional "hunter's stew" made with sauerkraut, fresh
    cabbage, meats, and mushrooms.
Oscypek: Grilled sheep's milk cheese often served with cranberry compote. Drinks & Sides: Rye bread, horseradish (chrzan), butter lambs, vodka,
    and beer.

Well, I guess it's not over for me too as I have ham and potato salad
to finish before I think of cooking anything else. But I do have a
rope of kielbasa in the refrigerator; it will have to wait a while
before it is cooked and consumed.

However, I did use a pound of hot breakfast sausage and made sausage
    balls this morning.

Dang. I should have saved my leftover mettwurst, kraut, and potatoes
    for today.
