• Waffle and bacon for breakfast

    I skipped my usual oatmeal, and we made waffles and bacon for
    breakfast.

    I had one waffle (8" diameter round) with butter and maple syrup,
    three slices of bacon, washed down with a glass of milk. The
    hubs had two waffles and four slices of bacon. Nothing suceeds
    like excess.

    Thinking about a fattoush salad for later in the day. My mint
    plant has become large enough to pick a few leaves.

    It's been a while since we had waffles. They are definitely more work to
    make than pancakes, but they are worth it. Given the choice, my wife
    always used to opt for waffles. Since she went gluten free about 6
    months ago we just haven't bothered.

    When we make a batch we cook all the batter and the uneaten waffles are cooled, wrapped and kept in the fridge. Later on they can be popped in
    the toaster to be heated up. They aren't as good as they were fresh but
    it's quick and easy and IMO better than Eggos.

    I don't like liquor. I love salad.

    Pshaw. I had my first Mint Julep just a few weeks ago. It was darned good.

    I should do that. When I make blueberry pancakes, I make enough for
    four breakfasts, usually over the next 8 days.

    I had half a chocolate chip pancake that my daughter made. I asked her how she made it - she made it the old-fashioned way. She asked me how I made pancakes. I said that I put the powder in a bowl and add water. She should stop wasting her time and do it my way. I've been making crispy edge pancakes. They are delicious.

    I used to make waffles quite often when the kids were at home. When I
    made extra I froze them. They thaw quickly in the toaster, they are
    much better than the supermarket stuff.

    Why is it that so many of these places that special in waffles and/or
    pancakes make the worst ones? I have given up in the specialty places. I
    am happy to say there are two local breakfast/lunch diners that have
    excellent pancakes.

    I can do either. Our original 1960s Sunbeam makes a square that had the partitions to make four out of it. Grids are reversible for waffled or flipped for grilled sandwiches.

    We also have a Belgian waffle maker that is round and also make a deeper waffle.

    The waffle iron I have is pretty. Chrome with heavy metal (not
    removeable) plates. When I was a kid, mom used to make waffles
    sometimes for breakfast. Keyword: sometimes. I have no idea why she
    carted it around every time we moved, for the 57 years my parents were married. Maybe it was a wedding present.

    It probably wouldn't matter to anyone who doesn't like waffles, but
    people who do like them might be a little more discriminating. I grew up
    with the old fashioned square waffles and loved them. When our old
    waffle iron died I could not find an old style with the square style and
    finer grid. I settled for a Belgium waffle maker. The pockets are deeper
    and they are are most often round.

    I have considered ditching the Belgium waffle maker and getting a
    regular one but we seldom make waffles these days. My wife is gluten
    free these days so waffles are not likely to be on the menu.
