• Lamb shanks part two

    Since we haven't had potatoes in the house and my wife is avoiding
    flower we were in a bind about a starch to have with the lamb shanks. We
    opted to try barley with them. She boiled some for about 40 minutes and
    them tossed it into the braising liquid. It worked nicely.

    The lamb shanks were so good there was no problem finishing them off but
    there was a lot of the sauce left over. Today I heated up some of the leftover sauce and added some water to it and had what was basically
    Scotch Broth. It was great.

    My plan for Tuesday's dinner is to make a large pot of vegetable beef
    soup. A few generous tablespoons of pearl barley will join the pot to
    simmer along with its' vegetable friends.

    I really like it in soups for the chew and also it does add just a
    smidge of thickening and body to the finished dish.

    I tend to have problems figuring out how much barley to add. If I had a
    little bit it is not enough and I am left wanting more. If I am more
    generous the barley seems to multiply and displaces all the liquid and
    sucks the flavour out of the stock. I suppose I should consult recipe.
    This lamb shank leftovers seemed to work out right.

    Those look like hand sliced potatoes and carrots. I will peel two
    good sized potatoes, chop them, and into the pot they will go. But
    I'm using a family size bag of mixed vegetables that have carrots,
    corn, and green peas. Chopped onions will be added as well as diced
    tomatoes and herbs and spices.

    I've used frozen 'vegetable soup mix' that have potatoes but also
    okra. I'm a big fan of okra, but not so much in soup.
